Nutritious Healthy Chia Pudding
Chia Puddings are not only easy & simple to make but for me on days when our two children have sport training, it's my go option to sustain their bellies until dinner time. At times I serve it for breakfast, sprinkled with homemade granola for texture & crunch but also the essential fats, calcium & protein needed to fuel them until morning tea as I use various grains & seeds to make granola. Superfoods is used so much but isn't everything that is grown & picked from nature super?
Perhaps Chia Seed are super as we have welcomed & embraced this Ancient Aztec & Mayan seed in our Western diet & have learnt so much about about it's health properties? We even grow it in Australia.
Chia is a Mayan word for strength. Some of the energy boosting properties from this plant protein include, Omega 3 fatty acids, rich in antioxidants, iron, calcium, magnesium, zinc & fibre. It is the fibre that gives hungry bellies the fullness. Anyone who cannot digest gluten will be happy to know Chia seeds are gluten free.
There is an abundance of Queensland grown strawberries & passionfruit at the moment. Both fruits are high in Vitamin C, packed with antioxidants, minerals & vitamins. I have created a delicious, simple, no fuss recipe for you to try. Make the night before & have a bowl ready to use for several days.
RECIPE: makes up to 8 serves
1 cup Chia Seeds
400ml coconut cream or coconut milk
600ml water
METHOD:
1. Place chia seeds, along with coconut cream/milk in a medium bowl. Stir through along with water. Cover & place in fridge until needed. Takes 1hr until chia seeds absorb liquid & expand.
Should you wish to have a thinner consistency add 50mls - 100mls, stir, place back in fridge.
TO SERVE:
Seasonal fruit
Seed & nut mix
granola
Roar Cordial
1. Place dessertspoon of chia in serving glass, drizzle cordial, sprinkle with chosen nuts, seeds or granola, place chopped fruit on top. Repeat again to get layers.
2. Garnish with a little of chosen nut, seed or granola & chopped fruit. If you have edible flowers a beautiful & appetising touch.
