Shirazi Salad. Persian - Cucumber, Tomato and Red Onion Salad
I'm sharing with you the way my family has made Shirazi Salad. You do not have to dice the ingredients so small however by doing so the natural juices are released especially from tomatoes then add the salad dressing and you have the perfect summer salad, naturally.
I used about
5 cucumbers, diced small.
6 tomatoes, diced small.
1/2 red onion, please dice small
1 sweet chilli
Optional to add chopped coriander or parsley
To make ahead:
Late Friday afternoon, the day before event. I chopped the cucumbers and red onion, keep them separated in a sealed container. Place in fridge.
Early Saturday morning the day of the event, I diced the tomatoes as well as 1 sweet green chilli with the seeds.
Place it all into a bowl, mix carefully then spoon into your serving bowl.
Salad complete and ready to go.
I'm not fond of dressing salads before hand. I much prefer to have the dressing on the side and people can help themselves. I find salads go limp, wilt, get oil clogged and don't last as long, so leftovers are a waste if they are not eaten within a day or so.
Mayonnaise based salads are different.
Fresh lemon Juice, Garlic and Olive Oil Salad Dressing.
Squeeze 1-2 fresh lemons, discard seeds and place into jar or bottle
Peel 1-2 garlic cloves, slice thick and add to lemon juice.
Extra Virgin Olive Oil, pour double amount to lemon juice.
Say you have 50 mls of lemon juice add minimum 100mls of Olive Oil.
Season with salt and pepper, place in fridge.
Use within 7 - 10 days.
I have re-used Roar Cordial bottle, washed, dried then placed one of our pourers with lid. Sits perfectly in drink shelf, side of fridge.
The fresh lemon juice salad dressing I shared was used for 2 salads, I also made Tabouli.

Whilst I was pre-preparing the Shirazi Salad, I also had another container to place diced cucumbers, shallots, parsley, red onions. Saturday morning when completing the salads, I chopped cherry tomatoes as well as fresh mint for the tabouli salad and added soaked, strained cracked wheat - burghul.
Depending what I am cooking, I substitute Cous Cous Pearls, Quinoa or even Pearl Barley for Burghul.
So many vegetarian and vegan options. I am so pleased everyone diets were met.
